Since my kiddos are not old enough yet to start the new school year, they have been up to other shenanigans this week. We are sending extra prayers out to all the parents out there who do have children starting the new school year next week.

Riding tractors, ice cream, and loving on baby goats has been the name of the game this week. Since my kiddos are gluten and dairy free, I have found a solution for not letting them miss out on the experience of eating an ice cream cone. A delicious gluten free substitute for ice cream cones we have found is Goldbaums Gluten Free Sugar Cones. I was able to find and order these treats online from Target. There are all kinds of different dairy free varieties of ice cream available now. If I don’t have that available, I use truwhip vegan whip (available at Kroger) to top their cones with.

This Week’s Books

Ava really enjoys the pigeon books. They are pretty cute and interactive.

We would have to recommend Lady Pancake & Sir French Toast. Both of us read this to both Ava and Shep multiple times. It was highly requested at bedtime and nap time. Ava enjoyed the funny story and Shep was fascinated with the illustrations. Definitely one of those books that parents can find humor in when reading to their children.

The Little School Bus and Farmyard Beat were big hits with Shep and his age level.

Gluten Free + Dairy Free Menu

  1. Grilled chicken apple sausage, sweet potato fries, broccoli, cauliflower, and carrots.
  2. Grilled cheese + beef quesadilla with DF avocado ranch, blueberries, basmati rice with avocado.
  3. GF Fish sticks + nuggets with ketchup, GF + DF ABC Mac-n-cheese, and strawberries.

It looks like a lot of food for 2 small toddlers, but our 4 year old eats like a 14 year old and Shep can put it away too. They seem to burn it all of during the day though.

  1. GF + DF style chicken bacon ranch pasta with broccoli.
  2. Grilled Chicken bowl with basmati rice, honey roasted corn, avocado, and DF habanero ranch.
  3. Grilled pork cutlets, GF spaghetti with lemon butter sauce and broccoli.

I use to make a regular version of chicken bacon ranch pasta and it was delicious. I have missed it ever since we changed our diet. This was my first time recreating a new version and to my surprise it actually turned out delicious. I can say that because my kids and hubby gave it rave reviews. To be honest though, they give rave reviews with almost anything I add bacon too. However, I will share the super simple recipe later.

I absolutely love rice bowls. They are super easy and quick to do for fast, healthy, and versatile lunches. All the pasta I use in our meals are all lentil pastas. In the kiddos meals, I do sometimes use chickpea pasta.

Farm Animals

My girl Butterscotch. She is my model hen. Our hens will be getting new neighbors in the form of baby ducklings in less than two weeks. We are currently working on getting our chicken run/chicken playground for the ladies finished up.

These two cuties have been getting use to their new home. We have decided on the names Sammy and Dean for these two brothers. We have been Supernatural fans since the beginning in 2005 and sadly the last season is over this year.

Workouts

I like to change things up pretty often. Living tiny right now almost forces me to change things up. For most of the summer I have been cycling indoors because of the heat. It’s been a great change up from jogging for cardio. My go to cycling routine has been Cathe Friedrich’s Strong & Sweaty Cycle Sweat. I’m a big Cathe fan. She is absolutely amazing at what she does. I’ve been super thrilled that she has all of her workouts (TONS) available on her app CatheonDemand.
