We had such a fun fall break this weekend. It was so nice to be able to get out and have some fun with others. The kiddos had a blast playing with their cousins at the pumpkin patch. They got to swim in corn, be brave and try out a zip line, bounce together, play fetch with oranges, hayride, and corn maze. They absolutely loved the corn maze. I think part of what made that so fun was having the easy ability to hide from their Mommas.
We also got to dodge the torrential rain and enjoy a rain-free Silver Dollar City trip with Mimi. I will probably forever buy season passes to this place because the kiddos love it so much and they are roller coaster junkies in training. Momma has to have a ride buddy!

My kids love Dr.Seuss. They are all about they rhymes and making rhyming jokes with their daddy.

Gluten Free & Dairy Free Menu
Back in the day I use to make enchiladas quite often. I love them, but have struggled to find a way to make them in a paleo form. Most gluten free tortillas are made with rice flour and Scott doesn’t seem to feel that well after eating anything containing rice flour. The kiddos got the two enchiladas on the end with a dairy free cheese.
I found these coconut wraps from Thrive Market and they were super easy to wrap the enchiladas with. They held their form and didn’t rip, so I was pleasantly surprised. Since they are made with coconut, they do have a coconut taste to them. It kinda gives the enchiladas a combined sweet and savory taste, which Scott and I both liked.
With the holidays and classroom parties coming up soon, I’ve been working on finding the perfect cupcake recipe. So far, I have found the perfect frosting recipe….which I could just eat by the spoonful.
Farm & Garden
We have our first Easter Egger egg! Isn’t it so pretty?! I’m anxious to see the other colors the hens come up with.
If there is a dirt pile on the property, that is the likely place you will find Bo. That’s his favorite place to chill.
The Barn Build
Pretty confident I am correct on saying that preparing and mapping out plumbing has been the least favorite part of building for Scott so far.
On the other hand it might just be the kids’ favorite part so far. If it involves dirt or getting dirty, they are all about it.
