We have some sensitive foodies in our family. With changing our diet to gluten and dairy free, we have seen some great changes for our family. Our kids’ eczema has improved significantly. My KP has improved. Scott’s inflammation is much better. Our hope in sharing recipes and information is that we can help others who are looking to make a diet change for their health.

Gluten Free & Dairy Free Peanut Butter Chocolate Chip Cookies

Ingredients:

  • 1.5 cups Natural creamy peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 cup Dairy Free chocolate chips

Instructions:

  • Preheat oven to 350 degrees. 
  • Mix all ingredients except chocolate chips in a mixing bowl.
  • Add chocolate chips and stir. 
  • Use a cookie scoop or form cookie dough into small balls.
  • Use parchment paper and arrange cookies 2 inches apart on cookie sheet. 
  • Bake 10-11 minutes. Cookies will be soft. 
  • Allow them to cool for 5 minutes or if you are like me you won’t and your cookie will be warm and crumbly…but delicious!
