There has been so much cuteness this week! Between sweet cousins and baby chicks, it has been wonderful!

How adorable is she?!! The sandbox seems to be her place of fun play. Her mommy and Nana will have to be convinced of that…hehe.

Gigi just needs 2 more lawnmowers to accommodate all the great grands. It is so funny listening to their driving stories, where they are going, where they are stopping, and getting a sense of how they will be as future drivers. Shep definitely seems like he has a need for speed.

Kids are Bo’s people. He really seems to love them. He is very much bashful around adults, but he will sit still for a child.

The girls and Shep were so cute playing and trading Gigi’s garden figures.

More sawmill projects underway! This week Scott has made a “duck hut” for a duck shelter. And I am getting new planter beds for the garden!

Turns out we didn’t have to worry about not having tad poles in our pond. There was already like a million in there and now we are adding the tadpoles we found in another water source. I’m hoping we will have enough frogs to eat all the flies this summer! Hahaha..

This Week’s Books

“The Only Way is Badger” I thought was a cute story that demonstrates how friends feel when someone is acting selfish. “Oh, No!” was a cute and fun read. “Big Bad Wolves at School” was a funny take on all the stories that feature a big bad wolf.

Ava is a big fan of Pinkalicious, so she was super excited to find some new ones she has not read yet. “Undercover Ostrich” I thought was adorable and had good humor.

Gluten Free & Dairy Free Menu

  1. Tuna patties topped with Tessemae Ranch and avocado with homemade hummus, tomatoes, and cucumber on the side.
  2. Paleo Pizza Casserole

I really should make hummus more. The fam seems to really like it and it is so versatile. Speaking of versatile, I have been trying a few ways to incorporate pizza into our lives. It is kinda difficult when you eat GF & DF and don’t like cardboard for crust. I would say this Paleo pizza casserole was a win. I will probably play around more with the cheese sauce, but it was definitely a good start to something great.

  1. Chickpea salad sandwich.
  2. Tuscan chicken with rice and lentils.

Thought I would try out a new twist on a sandwich. I made a chickpea salad, which was pretty yummy. I prepped it kinda like hummus but stopped right before it got creamy, so it has a thicker texture. Tuscan chicken is always one of my faves and lentils or “baby beans” (what the kiddos call them) are always their favorite.

Farm Animals

It was an exciting weekend anticipating our baby chicks hatching! The picture on the left was taken on Thursday night. You can kinda see the shape of the baby chick and her beak. The picture on the right was taken Friday morning around 9:00am.

We waited and kept checking all day long to witness her hatch. Scott went and checked at about 10:00pm and this is what he found. Not just one, but 3 little stinkers hatched without us getting to see.

Oh my! There are just the cutest. I could do this for a living.

We got to surprise the kiddos on Saturday morning, which was great because both of them have been feeling under the weather lately. The picture on the right is one that Scott and I got to witness her hatching. I think it only took her about 15 minutes to get outta there.

In all we have ended up with 5 new baby buff orpington chicks. None of our silkie eggs were fertilized. Pip, our silkie rooster, is clearly not doing his job. Maybe the little grinch bird is just too nice and is taking his time courting?

Fitness/Health

I discovered some fun health metrics on my Fitbit Versa. I found this neat little “health score” where you can compare how you are doing according to your exercise and heart rate to others in your age group. It makes a good motivator!

On Another Note…

This is one of my new favorite finds. This was one of my favorite sauces before transitioning our diet and I have not really found a great substitute or recipe for it yet, so I was delighted to find this. Even more delighted that it is actually delicious! It is so yummy paired with Italian sausage!
