Yummy Vegan Queso
Ingredients:
- 1 cup raw cashews
- 1 cup full fat coconut milk
- 1 cup vegetable broth
- 1 cup cooked potatoes
- 1 4-oz can diced green chiles
- 2 tsp garlic powder
- 2 tbsp nutritional yeast
- 1 tsp salt
- 1 tsp cumin
- 1 tsp turmeric
- half lemon-juiced
- 1 can diced tomatoes & green chiles (drained)
- cilantro – optional
Instructions:
- Cook 1 cup potatoes until softened.
- Meanwhile, add all other ingredients minus the diced tomatoes and green chiles into a blender.
- After potatoes finish cooking, add to blender and mix all together until creamy.
- Pour mixture into a saucepan and add diced tomatoes and green chiles. The mixture may already be warm enough that it doesn’t extra heat after adding diced tomatoes and green chiles. In that case serve and enjoy!
- Top with cilantro, pour over chips, french fries, veggies, or rice. This queso is wonderful with anything!
