Gluten Free & Dairy Free Chocolate Chip Banana Muffins
Ingredients:
- 1.5 cups of Gluten free flour (My favorite is Bob’s Red Mill Baking flour)
- 1/2 cup coconut sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla
- 3 ripe bananas
- 2 eggs
- 1/2 cup olive oil
- 1/2 cup Hershey Simple DF chocolate chips
- 1/2 cup coconut flakes (optional)
Instructions:
- Preheat oven to 375 degrees.
- Since I live tiny and loathe dishes, I combine everything into one single bowl starting with mashing the bananas. If you want to be proper though, mix dry and wet ingredients separately and then combine.
- The next step is my 4 year old’s favorite, add the chocolate chips. I also like to add cranberries and coconut flakes when I have them on hand. This batch makes one dozen muffins. These muffins freeze well, but if you are like my family you won’t have any left over to freeze!
- Bake 15-20 minutes.
