We have some sensitive foodies in our family. With changing our diet to gluten and dairy free, we have seen some great changes for our family. Our kids’ eczema has improved significantly. My KP has improved. Scott’s inflammation is much better. Our hope in sharing recipes and information is that we can help others who are looking to make a diet change for their health.

Instant Pot Mashed Sweet Potatoes

Ingredients:

  • 5 Medium Sweet Potatoes peeled and halved.
  • 1 tablespoon olive oil
  • 4 tablespoons dairy free butter (I like Country Crock plant butter with avocado oil)
  • Salt and cilantro (optional)

Instructions:

  • Place one tablespoon of olive oil in the instant pot.
  • Peel and halve the sweet potatoes.
  • Place potatoes in instant pot and pour  3/4 cup of water over the potatoes. 
  • On the manual setting of instant pot, cook potatoes for 35 minutes. 
  • Release immediately and drain the excess water from instant pot.
  • Add butter and mash.
  • Add cilantro and bacon crumbs (optional)
  • Feel welcome to add salt, I usually do not because we try our best to control the hubby’s hypertension.
