Instant Pot Mashed Sweet Potatoes
Ingredients:
- 5 Medium Sweet Potatoes peeled and halved.
- 1 tablespoon olive oil
- 4 tablespoons dairy free butter (I like Country Crock plant butter with avocado oil)
- Salt and cilantro (optional)
Instructions:
- Place one tablespoon of olive oil in the instant pot.
- Peel and halve the sweet potatoes.
- Place potatoes in instant pot and pour 3/4 cup of water over the potatoes.
- On the manual setting of instant pot, cook potatoes for 35 minutes.
- Release immediately and drain the excess water from instant pot.
- Add butter and mash.
- Add cilantro and bacon crumbs (optional)
- Feel welcome to add salt, I usually do not because we try our best to control the hubby’s hypertension.
